Globally-acclaimed Michelin Three Star Chef Christian Le Squer brings fashion-infused “haute couture” cuisine to La Maison 1888



One of the world’s finest chefs, Christian Le Squer has held three Michelin stars for the last 12 years

Danang, Vietnam: Christian Le Squer, the globally acclaimed Michelin three-star chef and doyen of French fine dining, has assumed the role of Chef at La Maison 1888, the signature culinary destination at InterContinental Danang Sun Peninsula Resort.

La Maison 1888 was honoured with One Michelin star in July – the only restaurant in central Vietnam to receive such recognition – and now, Chef Christian has introduced his unique style of fashion-infused, contemporary haute cuisine to this celebrated restaurant.

“We are thrilled to welcome Chef Christian to InterContinental Danang. He is, quite simply, one of the world’s greatest chefs – the holder of three Michelin stars for 22 consecutive years and global ‘chef of the year’ by Gault & Millau in 2023. He is going to bring enormous energy, creativity, and a new vision to truly elevate the experience for our guests,” said Seif Hamdy, the resort’s General Manager.

Hailing from a coastal community in Brittany, Chef Christian was inspired from an early age when he helped on his uncle’s fishing trawler. His passion for the epicurean arts took him to Paris, and by the age of 34 he earned his first Michelin star at Café de la Paix. This success lit the touchpaper for a truly sparkling career journey. He joined the prestigious Pavillon Ledoyen in 1999 and helped this famed establishment to secure three Michelin stars – an achievement he repeated at Le Cinq, the iconic French restaurant at Four Seasons Hotel George V in Paris.

At La Maison 1888, Chef Christian will elevate the restaurant’s classical French cuisine with masterful techniques and imaginative touches – including Vietnamese influences. Every plate he produces is a work of art: bright, vibrant and beautiful. Infused with passion, his menus will change with the seasons and showcase the finest local produce, including fresh seafood. He refers to this as “moving”: when a fresh ingredient is no longer available at the quality he seeks, he moves on.

According to Chef Christian, his highly original style of cuisine belongs to “the haute couture category, like a perfume, or a very special garment at a fashion show during Paris Fashion Week”.

“Having taken several trips to Vietnam, and especially to Danang, I have been able to understand the clientele and what they want. They come to taste a menu that balances tradition and innovation in French culinary art, and they also come to experience the elegance that represents haute cuisine,” Chef Christian revealed.

“I have immersed myself in the atmosphere and the people, discovered the flavours, new ingredients and the culture of Vietnam, so I could compose my cuisine. I am very much looking forward to working with the talented team at La Maison, including Chef de Cuisine Florian Stein.”

Set in an elegant colonial Indochine-style mansion designed by Bill Bensley, La Maison 1888 is one of the finest restaurants in South East Asia. It’s known for an extensive collection within its Wine Cellar and beautiful location overlooking the sea.
